Le coconut and raisin cake without milk or eggs is a cake made from flour, yeast, sugar, vanilla sugar, oil, water, coconut, raisins, lemon and rum.

Ingredients: 6 people
300 g flour
1 baking powder
200 g sugar
1 sachet of vanilla sugar
100 ml of oil
225 ml of water 
60 g of coconut flour
125 g of sultanas
1/2 half lemon (juice)
2 c. to s. of rum


  • Lightly oil and flour a 22 to 24 cm diameter chimney pan.
  • Preheat the oven in static mode to 180 ° C.
  • Place the flour, sugar, baking powder and vanilla sugar in a bowl.
  • Mix well.
  • Add oil and water and mix.
  • Finally, add the finely chopped raisins, soaked in lemon juice and rum and coconut flour.
  • Pour the mixture into the mold.
  • Smooth and bake for 30 min.
  • After 25 min, insert a toothpick or the tip of a knife into the center of the cake. If it comes out dry, the cake is ready.
  • Otherwise, continue cooking for another 5 min.
  • Take out of the oven and let cool.
  • Sprinkle with icing sugar.
