La bechamel sauce without butter or milk is a water-based sauce or vegetable broth, olive oil, flour, parmesan, nutmeg and salt.
Easy and quick to prepare, without butter or milk, without gluten if using rice flour, this light sauce is ideal to accompany starters and vegetables.

|Ingredients: about 350 g of sauce|
|400ml water (or light vegetable broth or soy milk)|
|1 C. to s. olive oil|
|40 g of rice flour (or normal flour if no gluten intolerance)|
|2 tbsp. to s. grated Parmesan (option)|
|grated nutmeg / salt|
- Pour the flour, salt, Parmesan, nutmeg and water in a bowl.
- Mix in an immersion blender until you obtain a fluid mixture without lumps.
- In a saucepan, heat the oil slightly, add the mixture and, stirring constantly, bring the mixture to a boil.
- Turn off the heat and let the bechamel cool in a bowl covered with plastic wrap.
- Use and taste!
