The farfalle with carrot pesto and yogurt are a dish made with farfalle pasta, carrots, nuts, olive oil, yogurt, parmesan and salt.

Easy and quick to prepare, tasty, they are perfect as a side dish or as a main course with a green salad.

Ingredients: 4 / 6 people
2 carrots
20 g walnut kernels
2 tbsp. to s. olive oil
100 g of Greek yogurt (or whole)
250 g of pasta (farfalle type)
30 g parmesan
fine salt


  • Place a large pot of water on the heat and bring to a boil.
  • Peel the carrots, wash and cut into pieces.
  • Put in the bowl of a blender with the nuts and oil, then mix until you get a fairly fine mixture.
  • Then add the yogurt and salt.
  • Salt boiling water and add the farfalle.
  • Place the pesto in a bowl and top with a few tablespoons of the pasta cooking water.
  • Once the pasta is cooked, add the pasta to the bowl and toss with the sauce while adding the grated Parmesan.
  • Serve hot or cold.
