Le homemade cherry syrup is a syrup made from cherries, sugar, lemon and water.

Easy to prepare, sweet, fresh and fragrant, it is perfect for quenching thirst during the day.

Ingredients: about 750 ml of syrup
600 g cherries
350 g sugar
30 ml lemon juice (1/2 lemon)
125 ml of water


  • Wash the cherries, dry with paper towels.
  • Remove stems and pits and place in a large bowl.
  • Add the sugar and lemon juice and mix.
  • Cover and let macerate at room temperature for at least 4 hours, stirring occasionally, at room temperature or if it is too hot left in the refrigerator overnight.
  • Mix using an immersion blender.
  • Strain the mixture through a fine mesh strainer and place in a large saucepan.
  • Pour in the cherry syrup, stir, then bring to a boil over low-medium heat.
  • When boiling, boil for about 5 minutes then turn off the heat.
  • Skim the foam.
  • To check the density of the syrup, pour a drop of syrup on a cold saucer.
  • If by tilting the drop does not flow, the syrup is ready.
  • Pour the hot syrup into sterilized bottles.
  • Store in the refrigerator.
