Le soft apricot cake with yogurt is a cake made from apricots, flour, sugar, yogurt, eggs, oil, yeast, vanilla, apricot jam, salt and brown sugar.

Easy and quick to prepare, soft, soft and very fragrant, it is perfect for snacks of the day.

Ingredients: 6 people
200 g apricots
250 g flour
150 g sugar
125 g yoghurt (preferably apricot)
3 eggs
70 ml of oil
1 baking powder
1 vanilla bean (or vanilla extract)
3 to 4 tbsp. to s. apricot jam
1 pinch of salt
1 c. to s. brown sugar


  • In a bowl, whisk the eggs with the sugar until a puffy and frothy mixture is obtained.
  • Then gradually add the oil and the yogurt gradually, while continuing to whisk slowly.
  • Also add the vanilla seeds or vanilla extract.
  • Gradually and delicately add the flour sifted with the yeast with a spatula, making slow movements up and down. Finish with a pinch of salt.
  • Pour a little more than half of the dough into a cake tin lined with parchment paper.
  • Arrange half of the sliced ​​apricots and a few spoonfuls of apricot jam on top.
  • Complete with the remaining dough, the remaining apricots sliced ​​and sprinkled with brown sugar.
  • Preheat the oven in static mode to 200 ° C.
  • Bake for 10 min, then lower the temperature to 170 ° C and continue cooking for another 50 min.
  • Check if the cake is cooked by making the test of the toothpick which should come out dry from the center of the cake if the latter is cooked.
  • Turn off the oven, open the door and leave inside for 10 min.
  • Take out of the oven and let cool completely.
