Le Norwegian saffron cake ( saffron kake in Norwegian) is a cake made from flour, butter, sugar, candied fruit, milk, raisins, eggs, saffron, Grand Marnier, baking powder and cardamom.

250 g flour
200 g butter
200 g sugar
100 g candied fruit
100 ml of milk
80 g raisins
60 g breadcrumbs or flour
6 eggs
1 sachet of saffron
200 ml of Grand Marnier
1/2 tbsp baking powder
1 C. to s. cardamom powder


  • In a bowl, whisk the soft butter until it becomes creamy.
  • Add the sugar and egg yolks. Mix well.
  • In a bowl, sift the flour previously mixed with the baking powder, saffron and a pinch of salt. Mix everything while adding the milk.
  • Then add the raisins and the candied fruits floured beforehand.
  • In a bowl, beat the egg whites until stiff.
  • Incorporate 1/3 of the egg whites into the preparation, stirring vigorously to loosen it.
  • Gently fold in the rest of the egg whites until stiff, making slow up and down movements with a spatula.
  • Mix everything well.
  • Pour into a buttered cake tin and sprinkle with breadcrumbs or flour.
  • Preheat the oven in static mode to 170 ° C.
  • Bake for about 50 min. 
  • Unmold while hot and soak in liqueur. 
  • Let cool and serve.
