CHRISTMAS Gingerbread Crunchy Cookies

The Crispy Christmas Gingerbread Cookies are cookies made from flour, sugar, honey, egg, spices; decorated with royal icing patterns.

Easy and quick to prepare, crispy and delicious, they are best enjoyed during the end of the year celebrations.

Dough :
350 g (2.8 cups) flour
160 g (0.8 cup) sugar
110 g (1/2 cup) cold butter
50 ml (2.5 tablespoons) of honey
1 egg
1 teaspoon of ginger powder
1 pinch of ground cloves
1 pinch of nutmeg powder
1 teaspoon ground cinnamon
1 pinch of baking soda
150 g (1 cup) icing sugar
1 egg white


  • In a bowl, add the flour, spices, a pinch of baking soda, sugar, salt and honey. Mix well.
  • Then add the very cold butter cut into small pieces.
  • Mix intermittently until you get a sandy mixture.
  • Pour into a glass bowl.
  • Make a fountain in the center and add the egg.
  • Knead quickly to compact the dough.
  • Leave to rest in the refrigerator for at least 30 minutes wrapped in plastic film.
  • Roll out the dough to a thickness of about 7 mm.
  • Cut the cookies with cookie cutters.
  • Place on a baking sheet lined with parchment paper.
  • Preheat the oven in static mode to 170 ° C / 340 ° F.
  • Bake for about 15 min.
  • In a bowl, beat the egg white.
  • Gradually add the sugar and mix well.
  • Pour the icing into a small pastry bag and decorate the cooled cookies.
  • Serve and enjoy.
