The praline rocks easy are chocolates made from a praline and chocolate paste coated with chocolate and hazelnut pieces.

Fondant and crispy, they are traditionally consumed during the end of year celebrations and now, they are particularly tasted during the end of the year celebrations.

250 g (1 cup) praline
200 g (1 cup) dark chocolate or chocolate coating
100 g (1/2 cup) milk chocolate
100 g (1 cup) almonds or hazelnuts


  • Melt the milk chocolate in a saucepan over low heat.
  • Once melted, put in a bowl and add the praline.
  • Mix to obtain a homogeneous paste.
  • Pour into a small rectangular pan covered with parchment paper to a height of about 2 cm (1 inch).
  • Refrigerate for about 1 h.
  • Unmould and cut into regular cubes.
  • Return to refrigerator.
  • Chop the almonds with a knife and put in a bowl.
  • Temper the 200 g of chocolate couverture (bring to 50 ° C / 122 ° F, cool to 280 ° C / 536 ° F and heat to 31 ° C / 88 ° F over a just lukewarm saucepan).
  • Add the tempered chocolate to the chopped almonds and stir quickly with a spatula.
  • Dip the praline cubes in the chocolate and almond mixture and place on baking paper.
  • Leave to set and dry.
  • Serve and enjoy!
