Le sugar-free caramel with agave syrup is a preparation based on agave syrup, water and baking soda.
Agave syrup (also called agave "nectar" or mead) is a sweetener produced from agave species. It is less viscous than honey and has a sweeter taste.
Agave syrup contains an average of 75% carbohydrates. Due to its high fructose content, agave syrup is said to have a low glycemic index (2 times lower than certain honeys and three times lower than white sugar) while having a high sweetening power.

|about 90 ml (3 fluid ounces) caramel|
|120 g (1/3 cup) agave syrup|
|50 ml (3 tablespoons) of water|
|1 / 2 teaspoon baking soda|
- In a glass or terracotta container, pour the agave syrup and water.
- Add the baking soda.
- Mix well.
- Heat in the microwave at 800 W power for 2 min.
- Take out and stir.
- Heat for another 30 seconds and repeat the process until the surface begins to bubble and the caramel takes on color and texture.
