POTATOES IN A CHAMPS COAT

The potatoes in a field dress are potatoes cooked in water or dry, under ash or in the oven or steam in order to best preserve their nutritional qualities.

refer to potatoes cooked and served with their skin on.

8 medium sized potatoes
4 tbsp. to s. heavy cream
2 tbsp. to s. mustard / chives

Preparation:

  • Preheat the oven in static mode to 220 ° C.
  • Wash the potatoes, put them on the baking sheet without peeling them.
  • Cook them for about 25 to 30 minutes.
  • Check doneness by sticking the blade of a knife inside.
  • In a bowl, combine the mustard and crème fraîche.
  • When the potatoes are cooked, place on plates, cut into quarters and add 4 tbsp. to c. sauce on top as well as chopped chives.
  • Serve hot.
