8 medium sized potatoes
4 tbsp. to s. heavy cream
2 tbsp. to s. mustard / chives


  • Preheat the oven in static mode to 220 ° C.
  • Wash the potatoes, put them on the baking sheet without peeling them.
  • Cook them for about 25 to 30 minutes.
  • Check doneness by sticking the blade of a knife inside.
  • In a bowl, combine the mustard and crème fraîche.
  • When the potatoes are cooked, place on plates, cut into quarters and add 4 tbsp. to c. sauce on top as well as chopped chives.
