SOUTH-WEST Ceps OMELETTE

THEmushroom omelette is a dish made frome porcini mushrooms, eggs, parsley, garlic, butter, salt and pepper.

Easy and quick to prepare, tasty, this typical preparation from the Center and South-West of France, is perfect with potatoes and a green salad.

500 g of fresh porcini mushrooms
9 fresh eggs
1 branch of parsley
25 g butter
salt pepper
1 clove of garlic

Preparation:

  • In a bowl, combine the eggs, parsley, salt, pepper and garlic.
  • In a buttered or oiled pan, very hot, brown the previously cut porcini mushrooms.
  • Let reduce for about 25 minutes until you get a soft consistency.
  • Turn several times to prevent them from browning too much.
  • Once the porcini mushrooms have reduced well, lower the heat and pour the mixture from the bowl.
  • Cook for a few minutes depending on your taste, the omelet being more or less runny depending on the cooking time.
  • Serve hot, accompanied by a green salad.
  • To taste!
