Le Madeira cake chocolate is a sponge cake made from flour, sugar, milk, butter, eggs, yeast, flavored with cocoa.

A British and Irish specialty, it is not originally from the island of Madeira but bears this name in reference to Madeira wine. Indeed, this wine was very popular in England in the middle of the XNUMXth century when this cake, often served with this wine, was invented. The confusion arises from the fact that there is a traditional Madeiran cake (the bolo of mel, spicy honey cake) very different from its English counterpart. English Madeira cake is often served with tea or liqueurs. It is also one of the best bases for tiered cakes. Its very compact texture absorbs little moisture and does not deform.

200 g sugar
200 g butter
4 eggs
2 c. to s. of milk
200 g flour
1 sachet of baking powder
50 g cocoa


  • In a bowl, mix the eggs with the milk.
  • Separately sift the flour, baking powder and cocoa
  • In a large bowl, whisk together butter and sugar until creamy.
  • Alternately add the egg mixture and the flour mixture
  • Work the mixture until you get a smooth mixture.
  • Pour the dough into a rectangular mold lined with baking paper.
  • Level the surface well.
  • Preheat the oven (static) to 160 ° C.
  • Bake for 1 hour.
  • Go out and let cool on a rack.
