Le red square cake ou Gato Carré Rouge is a Mauritian dessert made from butter cake with a glaze made from red syrup flavored with strawberries, sprinkled with coconut and topped with a little Chantilly cream.

The "Carré rouze" or "Cake Francis" in Mauritian Creole is derived from the pink Lamington cake of Australian origin. Easy to make, it is ideal for afternoon tea or tea time.

175 g flour
175 g powdered sugar
175 g butter
1 pinch of salt
3 eggs
1 c. to s. of baking powder
Frosting and finishing:
250 g icing sugar
grated coconut
natural strawberry flavor
red dye
whipped cream
candied cherries

Cake preparation:

  • Preheat the oven to 180 ° C.
  • Mix the butter with the powdered sugar and salt until you get a creamy mixture.
  • Stir in the eggs one by one, then sifted flour and baking powder together.
  • Butter lightly and flour a square or rectangular pan.
  • Pour in the dough. Smooth with the spatula.
  • Brush the top with a little milk.
  • Preheat the oven to 180 ° C.
  • Bake for about 35 minutes until the blade of a knife inserted in its center comes out dry.
  • Leave to cool in the mold then unmold and cut into small squares of 3 to 4 cm sides.


  • Mix the icing sugar with a little water to obtain a liquid enough liquid.
  • Add the red dye and the natural strawberry flavor.
  • Take a serving dish and sprinkle with coconut. In a bowl, put some coconut.
  • Dip the squares in the syrup and then in the coconut bowl. Make sure to soak all sides of the square with syrup and coconut.
  • Place on the serving platter.
  • Optionally, put a little Chantilly cream on each of the squares. Add a candied cherry on top of the whipped cream.
